Power Protein Salad

This refreshing dish is a great pre and post work out meal that will give you lots of energy. Mix it up with different fresh berries and root vegetables that you find at your local farmers market to keep it fresh each time your prepare it. Try using red and golden beets for great color and flavor variety, as well as the freshest seasonal berries that are available. I love to use the strawberry balsamic vinegar and lemon infused olive oil from the Olive Oil Store. You can order these from their website online if there is not a store near you.

Ingredients:

1 large bag baby organic spinach greens

1 bag organic baby cut carrots
1 bunch beets
1 bag parsnips

1 bag Brussels sprouts, bottom removed, sliced in half lengthwise
1 pint blueberries, blackberries, or strawberries (remove stem and slice if using strawberries) 1 can organic garbanzo beans, drained and rinsed
1 bag steamed shelled edamame
drizzle strawberry balsamic vinegar
1 small log fresh goat cheese
drizzle lemon olive oil

 

 

Directions:

Preheat the oven to 450 degrees.
Line a baking sheet with nonstick foil.
Rinse and dry with a paper towel, leave skin on and chop vegetables.
Add 1 tsp olive oil, 1/4 tsp sea salt, 1/4 tsp black pepper toss.
Spread on a baking sheet evenly.
Bake for 34 minutes, broil on high.
Allow to cool for 15 minutes.
Combine all ingredients, drizzle with strawberry vinegar and lemon olive oil, and top with crumbled goat cheese.
