Tabbouleh Salad

Tabbouleh salad is a light and colorful Mediterranean dish that is packed with lots of healthy herbs and vegetables. I love to use Za'atar spice blend, which can be purchased either in-store or online at penzeys.com, in this salad. This dish can be prepared and kept in the refrigerator up to three days.

 

Ingredients:

1 and 1/2 cups uncooked bulgur wheat

1 bunch flat leaf parsley, chopped

1 bunch fresh mint, chopped

2 hot house cucumbers, peeled and chopped

1 pint organic grape tomatoes, cut in half lengthwise

1/4 cup green onions, chopped

2 Meyer lemons, juiced

1 tbsp extra virgin olive oil

A dash of sea salt and black pepper

1/2 tsp Za'atar spice blend

1/2 tsp sumac

 

Directions:

1. Follow cooking directions on back of box forbulgur wheat.

2. Add ingredients and stir together.

3. Serve cold.
