Recipe of the Month – December
Sauteed Bok Choy w/ Chicken

The holiday season has come, and the temperature has begun to drop very rapidly. Luckily for us, greens are one of those hardy vegetables that actually prefer the cold. Sometimes, the frost can be detrimental to the crops, but with a little due diligence, one can prepare for the cold weather in order to protect those nutritious vegetables that we want to consume so badly. Today, we are not doing any regular American Greens but rather an Asian variety.

On Sunday, December 8th, where I will delve into the world of Asian Greens! Until then, go ahead and check out this month’s recipe, where we have a fun, innovative, and simple way to enjoy Bok Choy.
Ingredients:
The Vegetables
❖ 2 Medium or 1 Large Head of Bok Choy
❖ 1 Meduim Onion
❖ 4 medium Cloves of Fresh Garlic
❖ Small piece of Fresh Ginger
The Protein
❖ 12-14oz of Raw Chicken or whatever protein you want to cook
The Oil & Spices
❖ 2 Tbl Sesame Oil
❖ 3 Tbl Soy Sauce
❖ 1 Tbl Mirin or Rice Wine
❖ (to taste) Himalayan Pink Fine Salt
❖ ¼ tsp Ground Black Pepper

Instructions:
Step 1: Preheat Saute Pan. Slice onions, slice ginger, and mince garlic. Add 1 Tbl sesame oil and onions, ginger, and garlic. Cook on medium to high heat until translucent.
Step 2: Then add bok choy and 1 Tbl of soy sauce. Cover to allow the vegetables to steam and reduce to medium heat, if not already there. Wait about 4-5 minutes until the bok choy has begun to steam and become cooked. Then remove from pan into bowl, but keep covered to allow carry over cooking.
Step 3: Use the same pan (without rinsing) for the protein. If using chicken, please make sure to cook thoroughly. Add the other 1 Tbl of sesame oil. Cut protein into bite size pieces or however you wish to eat it. Add protein to the heated pan and add salt and pepper. Once seared off, add 2 Tbl of soy sauce and 1 Tbl of Mirin or other asian type of wine (or water). Cover and cook until done.
Step 4: Grab your plate and add the vegetables first. Then add the protein.
Step 5: If you want to go the extra mile, fidelity chop some cilantro and add some toasted sesame seeds. Step 6: Enjoy!!
